Let me start by confessing how much I love burgers! This was one of the hardest foods to give up on my journey to becoming a vegan. A juicy burger with all the fixings and some fries were a weekly staple in my diet and I continued eating at least one burger a month on my journey to becoming a vegan until one day I decided I was finally going to give up meat but I'm not going to lie and tell you that I don't miss burgers.
Black bean burgers did not appeal to me at all!
Before I tried this recipe, I had never even eaten a black bean burger because it just didn't sound appetizing to me but my craving for a burger had me googling recipes almost daily for a week solid until I found one that didn't sound to complicated or non appetizing.
Those who have tried my recipes know that I'll hijack a recipe in a minute and put my own spin on it but not without giving credit where credit is due and I must thank Hummusapien for this appetizing and easy to make recipe that I put my on spin on of course.
I must confess, that I had to make this recipe a couple of times and adjust my ingredients before I got the consistency right. I forgot to take new pictures so the ones pictured show a flatter burger but the measurements I provided should yield you a thick burger.

Serving 6 - 8 Burgers

For the Easy Slaw: In a medium sized mixing bowl, combine all ingredients and allow to sit in the refrigerator for at least 30 minutes while you make the burgers.
Put all ingredients and 1 cup of the bread crumbs into a food processor and pulse until all ingredients are blended but have a chunky consistency.
Heat a non stick grill pan and when the pan is hot spray it with olive oil.
Pour the other cup of bread crumbs on a plate and set to the side.
Use a flat spatula or large spoon to scoop out a hand sized portion of the black bean mixture and sprinkle with bread crumbs and roll into a ball and put on the grill and cook for 2 to 3 minutes on each side and then flatten with a spatula and cook another 2 to 3 minutes on each side until you get a nice dark brown color.
Depending on the size of your patties, this recipe should yield 6 to 8 burgers.
